Kremez

Poslednji recept koji sam pripremila sa bloga Mamina jela, a za istragu FBI rukavice koju je pokrenula Maja, bio je Kremez - jos jedan recept koji sam merkala od kako je postavljen na blog. Nikada nisam cula za ovaj kolac, ali kupio me na prvo citanje, sto sastojcima sto predivnim fotografijama kojima ga je Zeljka predstavila.

Sa ovim kolacem imala sam "mali" peh, prvu koricu sam prepekla a zatim je postavila na vrh kolaca... Nije izgledala ni malo privlacno a lomila se pri secenju pa sam resila da je odstranim i kolac posluzim samo na donjoj kori. Skidanjem gornje korice povukla sam i deo slaga tako da sam i na taj nacin osiromasila kolac ali, i uprkos svim greskama, uzivali smo u ovom kolacicu :)

Kremez

Kore:
420 g brasna
150 g secera
75 g maslaca ili margarina
2 jaja
1,5 kasika meda
1 kasika mleka
1 kasicica sode bikarbone

Fil:
1,5 litra mleka
250 g secera
3 pudinga od vanile
3 kasike gustina
2 kasike brasna
1 vanili secer
250 g maslaca ili margarina

i jos:
2 kesice slaga ili 2,5 dl slatke pavlake


Priprema:
Sjediniti sve sastojke za kore i umesiti glatko testo. Ostaviti testo 15 minuta u frizideru a zatim ga podeliti na dva jednaka dela.

Ukljuciti rernu da se zagreje na 180 stepeni. Pripremiti pleh velicine 35x25 cm, poledjinu pleha namazati maslacem i posuti brasnom ili samo poprasiti brasnom.
 
Na radnoj povrsini posutoj brasnom razviti prvi deo testa na velicinu pleha. Prebaciti ga pomocu oklagije na poledjinu pripremljenog pleha, iseci deo koji visi preko stranica pleha i peci, u zagrejanoj rerni, 8-10 minuta ili dok ivice blago ne porumene. Na isti nacin ispeci jos jednu koricu.
Ostaviti pecene kore da se ohlade.

Za fil, razmutiti puding, brasno, gustin, secer i vanili secer u malo mleka. Ostatak mleka staviti na ringlu  da prokuva. Sipati razmucen puding u vrelo mleko i, mesajuci, kuvati dok se smesa ne zgusne. Skinuti s vatre, prekriti povrsinu fila prozirnom folijom i ostaviti da se prohladi do sobne temperature.
Izmiksati penasto maslac/margarin, dodati prohladjeni fil i nastaviti miksanje dok se smese ne sjedine.

Staviti koricu u pleh na kome se pekla i preko rasporediti fil.

Slag ili slatku pavlaku cvrsto umutiti, naneti preko fila u plehu i sve prekriti drugom koricom. Kolac blago opteretiti i ostaviti preko noci u frizideru da se fil stegne a kore omeksaju.

* Za fil sam koristila bourbon vanili secer.

* Ako zelite verziju bez gornje kore, prepolovite sastojke za koru i ispecite samo jednu. U tom slucaju, po zelji, preko slaga narendajte malo cokolade.

    1. Moja rerna izgleda jace pece pa mi se prva kora malo prepekla ali kolac je odlican, verovatno sa tom gornjom korom i vise slaga jos bolji :)
