Bananice

Na ruskim blogovima veoma cesto cete naleteti na prhko testo oblikovano u bananice punjene filom od sira i banana.
Zvuci cudno? Meni svakako jeste ali ipak nisam odolela da ne probam i tu kombinaciju i na kraju krajeva mogu da vam kazem da uopste nije lose ispalo. Testo je savrseno meko, fil se stopi sa testom a i okus je veoma zanimljiv, narocito ako volite banane... sir se uopste ne oseti.
Jedina mama je sto oblikovane banane, zbog mekog testa, malo izgube izgled pri pecenju i zato je jako vazno da testo sto bolje rashladite pre razvijanja... evo kako je to izgledalo kod mene :)

Bananice
(recept delimicno preuzet odavde)

Sastojci za testo:
200 g maslaca
2 dl kisele pavlake
100 g secera
1 prasak za pecivo
450 g brasna

Fil:
100 g sira (ja sam koristila Ricota)
70 g secera
1 banana
1 vanili secer (koristila sam bourbon)
2 kasike brasna

i jos:
zumance
1 kasicica kakaa


Priprema:
Izmesati sastojke za testo, umesiti rukom a zatim dobijenu kuglu podeliti na 20 jednakih delova. Svaki deo testa oblikovati u lopticu, sloziti na tacnu i ostaviti u frizideru oko 45 minuta ili onoliko dugo dok testo ne bude za duplo cvrsce nego u trenutku kad je oblikovano u kuglice.

U medjuvremenu pripremiti fil, oljustiti bananu, iseckati je na kolutice a zatim zgnjeciti viljuskom. Dodati sir, secer i vanili secer, dobro izmesati i ostaviti u frizideru dok ne zapocnete razvijanje testa.


Ukljuciti rernu da se zagreje na 180 stepeni.

Izvaditi rashladjene kuglice iz frizidera, razviti ih u duzinu na povrsini posutoj brasnom, na svaku staviti dve kasicice fila, a zatim pokupiti krajeve testa prema sredini i slepiti ih tako da nema otvora. Okrenuti pecivo da zalepljenim delom lezi na radnoj povrsini te izduziti gornji deo da dobijete "peteljku".
Pokvasiti prst vodom, umociti ga u kakao a zatim na donjem delu banane ostaviti otisak. Oblikovane banane sloziti u pleh oblozen papirom za pecenje, ostaviti malo razmaka jer ce se rasiriti u rerni.
Umutiti zumance i premazati svaku bananu, vodite racuna da cetkicom ne razmazete kakao.

Peci banane, u zagrejanoj rerni, 12-15 minuta ili dok povrsina blago ne porumeni.



* Napravila sam duplu smesu fila prema receptu koji mi je bio "vodic" i meni je to bilo previse a kolacici su i ovako bili sasvim fino nafilovani. Ostalo mi je oko polovine pripremljenog fila te sam u recetu navela polovinu mere.

* Prvu tepsiju bananica radila sam nakon pola sata stajanja u frizideru i one su skoro potpuno izgubile oblik. Drugi deo testa stajao je u frizideru 15-ak minuta duze, testo je bilo mnogo cvrsce a kolacici su manje izgubili na izgledu (to su ove bananice koje vidite na slici), mozda im ne bi skodilo cak i malo duze lezanje i frizideru.
