Nastar su maleni keksici punjeni marmeladom od ananasa. Prhki keksici, namenjeni za jedan zalogaj, pruzaju vam dve mogucnosti - mozete da uzivate u ananasu svim svojim culima ili da mu potpuno zamaskirate ukus ukoliko niste ljubitelj istog. Marmelada u kombinaciji sa specificnom aromom cimeta pruzice ananasu jednu potpuno novu dimenziju i osvojiti cak i one koji apsolutno nikada ne posezu za komadicem ove vocke.
Izuzetno dekorativni i nista manje ukusni ovi keksici mogu biti prijatno osvezenje vasoj praznicnoj kolekciji slatkisa.
Nastar
(recept preuzet odavde)
Potrebno za testo:
150 gr maslaca
100 gr margarina
50 gr secera u prahu
2 zumanca
1/2 kasicice ekstrakta od vanile
1/4 kasicice soli
350 gr brasna
50 gr sitnog kukuruznog brasna
Potrebno za punjenje:
450 gr svezeg ananasa
220 gr finog kristal secera
1/2 kasicice cimeta ili ekstrakta limuna (ananasa)

Nastar

Potrebno za testo:
150 gr maslaca
100 gr margarina
50 gr secera u prahu
2 zumanca
1/2 kasicice ekstrakta od vanile
1/4 kasicice soli
350 gr brasna
50 gr sitnog kukuruznog brasna
Potrebno za punjenje:
450 gr svezeg ananasa
220 gr finog kristal secera
1/2 kasicice cimeta ili ekstrakta limuna (ananasa)
Potrebno za premaz:
1 zumance
1 kasicica kondenzovanog mleka (moze se izostaviti)
1/4 kasicice soli
1/4 kasicice hladne vode
Priprema:
Prvo pripremiti punjenje od ananasa: usitniti ananas u multipraktiku, dodati secer pa staviti na umerenu vatru i zagrejavati dok ne prokuva. Kad provri dodati cimet (ekstrakt limuna ili ananasa), smanjiti vatru pa lagano kuvati dok sva tecnost ne ispari, a ananas se zgusne (trebace vam oko sat vremena). Povremeno mesati.
Za testo izmiksati maslac, margarin i secer u prahu. Dodati jedno po jedno zumance, ekstrakt vanile i so pa dobro umutiti. Na kraju dodati obe vrste brasna, malo izmiksati a zatim umesiti testo rukom.
Za premaz izmesati sve sastojke.
Prebaciti testo u spric za keksice.
Istiskati dugacke trake testa po radnoj povrsini.
Od ananas marmelade oblikovati valjcice sirine testa.
Na pocetak testa poloziti jedan pripremljeni valjcic i lagano urolati.
Kada je testo skroz omotano oko ananas punjenja odvojiti nozem rolnicu od ostatka testa.
Pripremljene rolnice redjati u pleh postavljen papirom za pecenje i cetkicom premazati pripremljenim premazom.
Peci u rerni zagrejanoj na 180 stepeni oko 15-20 minuta.
* Keksici na slici pravljeni su po originalnom receptu sa 300 gr ananasa sto je, definitivno, premalo tako da sam sastojke za dzem uvecala za polovinu. Ako vam se desi da preostane testa, istisnite ga spricom u razlicite oblike, slozite u pleh, premazite i ispecite najobicnije keksice.
Nastar moze da se istiska i nekim drugim nastavkom sprica, ali vodite racuna da, ako idete na manje i tanje keksice morate skratiti i vreme pecenja.
Ako nemate ovakav spric, razvaljajte testo na radnoj povrsini, posutoj brasnom, isecite okrugle oblike (ili neke druge po vasoj zelji), blago udubite sredinu dnom rakijske casice pa tu sredinu napunite kuglicama ananas marmelade. Premazite krajeve testa i ispecite keksice.
Nastar - Pineapple Rolls
(original recipe, adapted from here)
Dough:
150 gr butter
100 gr margarine
50 gr icing sugar
2 egg yolks
1/2 teaspoon vanilla essence
1/4 teaspoon salt
350 gr plain flour
50 gr cornflour
Pineapple jam:
450 gr grated pineapple
220 gr castor sugar
1/2 teaspoon cinnamon (pineapple essence or lemon essence)
Egg glaze:
1 egg yolk
1 teaspoon condensed milk (optional)
1/4 teaspoon salt
l/4 teaspoon water
To make the pineapple jam:
Place grated pineapple and sugar in a heavy-bottomed aluminium saucepan and cook over moderate heat until it begins to boil. Add cinnamon (essences) and lower the flame, then continue to cook until mixture is almost dry and thick. Keep stirring all the time (this takes about an hour). Leave aside to cool.
To make the pastry: Cream butter, margarine and sugar until light. Beat in egg yolks one at a time. Add essence and salt and beat until fluffy. Fold in sifted dry ingredients and mix to a firm dough. Put mixture into a nastar mould and press out into strips 6cm to 7cm long.
Place 1/2 tsp of pineapple jam filling on the edge of a strip and make a small elongated roll. Cut off excess dough. Put nastar rolls on greased trays. Brush with egg glaze. Bake in preheated oven at 180ºC for 20 minutes or till golden brown. Cool on wire racks before storing.
To make egg glaze, lightly beat the above ingredients together.

Petra, i ja mislim da ukuvavanje i cimet (koji je kod mene naizostavan) dovedu do ove boje. To, ustvari (kao sto vidis), i nije klasican dzem, dobijes lepljivu smesu koja se fino da oblikovati u rukama, znaci moras dugo da je kuvas da postignes tu gustinu.
