Prhko testo punjeno visnjama sa premazom od belanaca i mlevenih oraha - najnoviji kolac koji me oborio s nogu. Inace nisam ljubitelj kolaca sa visnjama ali ovaj me toliko prijatno iznenadio da sam ga pripremila nekoliko puta u poslednjih par dana.
Malo sam izmenila originalnu verziju - jeste veoma tacna i precizna ali mi se testo nije dopalo, za moj ukus previse maslaca i pomalo bljutavo (u testu nema ni grama secera). Onda mi je premaza bilo previse a i priprema visanja koje se, po originalnoj verziji, kuvaju sa gustinom nekako bespotrebna te sam mic po mic sve to izmenila i dobila verziju koja mi se dopada. Nadam se da ce i vama :)

Sovine oci
Testo:
450 g brasna
250 g maslaca
150 g secera u prahu
3 zumanca
1 vanili secer
prstohvat soli
2 kasike kisele pavlake
Premaz:
3 belanca
150 g secera
150 g mlevenih oraha
i jos:
500-600 g visanja
5-6 kasika secera ili po ukusu
Priprema:
Visnje staviti u cediljku, posuti sa secerom i ostaviti da se iscede.
Za testo izmesati brasno sa maslacem da dobijete mrvice. Dodati so, secer, vanili secer, zumanca i kiselu pavlaku pa umesiti mekano testo. Umotati ga u plasticnu foliju i staviti u frizider na sat, dva vremena.
Ukljuciti rernu da se zagreje na 180 stepeni. Veliki pleh obloziti papirom za pecenje.
Izvaditi rashladjeno testo iz frizidera i podeliti ga na cetiri jednaka dela. Radnu povrsinu obilno posuti brasnom, staviti jedan deo testa, posuti i testo brasnom i razviti pravougaonik. Po potrebi, u toku razvijanja, testo blago posipajte brasnom i vodite racuna da ispod testa ima dovoljno brasna da se ne zalepi za radnu povrsinu. Iseci krajeve testa da dobijete pravilan oblik.
Uz dve duze strane dobijenog pravougaonika sloziti visnje, jednu do druge.
Zamotati visnje testom sa jedne strane a zatim to isto uraditi i na drugoj strani.
Nastaviti rolovanje testa, sa obe strane ravomerno, dok se rolatici ne spoje.
Staviti nafilovano testo u pripremljen pleh. Pripremiti jos tri takva rolata.
Za premaz izmiksati belanca u sneg. Dodati secer i nastaviti miksanje dok smesa ne postane sjajna i penasta. Iskljuciti mikser, dodati orahe i dobro izmesati varjacom ili zicom.
Rasporediti belanca preko sva cetiri rolata. Kasikom razmazati smesu da prekrije rolate u potpunosti.
Peci kolac, u zagrejanoj rerni, 30-35 minuta ili dok ivice prhkog testa ne porumene a premaz blago potamni i dobije "koricu".
Ako se premaz pecenjem prosirio i rolati spojili, po vadjenju iz rerne, tankim nozem odvojiti rolate i ostaviti da se ohlade.
* Kolicina visanja moze varirati u zavisnosti koliko su krupne... kolac na slikama radjen je sa neverovatno sitnim visnjama tako da sam ih stavljala duplo (jednu na drugu) i potrosila sam oko 1 kg visanja (slike priprema su uradjene prilikom prve izrade kolaca).
* Koristila sam smrzute visnje, a odlicne bi bile i one iz sirupa (dobro iscedjene) ali u tom slucaju treba izbaciti secer. U sezoni mozete koristiti sveze visnje.
* Testo mozete ostaviti u frizideru i malo duze, treba da bude hladno i stegnuto ali da se jednostavno razvija oklagijom. Ako vam je po vadjenju iz frizdera mekano vratite ga jos koji minut a ako je pretvrdo ostavite ga par minuta na sobnoj temperaturi i onda krenite sa pripremom.

ReplyDeleteHvala Mirjana! Probaj, samo biraj malo krupnije visnje ako si u mogucnosti. Trenutno koristim kupovne iz zamrzivaca i toliko su sitne da ne verujes... napisala sam da sam ovde stavljala dupli red visanja jer sam mislila da ce se ti sitnisi jedva nazirati nakon pecenja.
